Italian gastronomy is very rich in so-called “under glass” recipes, the most famous, of course, are those for tomato sauce in all its regional varieties. In this series of five meetings, we’ll take a journey from the north to the south of Italy, and get to know five famous “conserves” — jarred foods — from some of the famous regions of the country.


Preserving and Conserving

Each session will teach you how to prepare your “Conserva,” a perfect holiday gift for good friends or to make an excellent impression on guests during your next dinner party!
 • Piedmont — Make this super-natural sauce with only three ingredients — a cream created with nuts.
 • Puglia — Zucchini marinated in vinegar, garlic and fresh mint. This southern specialty adds flavor as an accompaniment to meats, including cured meats, or it can be enjoyed on its own.
• Monferrato (Piedmont) — Ratatoullie, a mixture of sweet and sour vegetables scented with cloves, can be eaten alone or with the addition of tuna or hard-boiled eggs.
• Veneto — Onion sauce, perfect for serving with cheese or poultry.
• Sicily — Caponata (eggplant) reflecting the sun and the flavors of the island.

Paola Nervi

Originally from Monferrato, Paola currently lives in Turin after having spent many years in France, where she was in charge of Slow Food Brittany. Since returning to Italy, she has been active in promoting a socially responsible enterprise dedicated to supporting migrant women by training them for a future in the field of gastronomy.
This series, CONSERVE | PRESERVE, inaugurates GUSTO SUITE, which is both a domestic, as well as a professional, laboratory — quality food made at home.

There is a minimum of 5 and a maximum of 12 students per class, so everyone will be able to participate as much as needed.
Price includes all five recipes, customized labels to apply to your jars that indicate the product names, ingredients and advice on how to use them, which will make them perfect Holiday gifts.

Classes are payable by Cash/Check/PayPal/Credit Card.
