Italy produces more rice than any other country in Europe — in fact, rice is more popular than pasta in some of Italy’s northern regions. Perhaps the most traditional preparation of Italian rice is the classic dish called Risotto alla Milanese. Its recipe calls for the rice to be slowly cooked while adding small amounts of stock to the rice as it’s cooking. Then, when it’s nearly finished, a small quantity of saffron is added to give the risotto its typical golden color. Before serving, there’s one more step that’s required —mantecatura (creaming).
